Maybe I’m just getting old, but I’ve noticed too many bodegas selling hard rolls that turn into little shells after 10am. You order a BEC and they hand you a roll that barely gives, sometimes pressed down so the grease is the only thing saving it. I’m not trying to drop money on a stale roll. Lately I’ve been asking for bacon egg and cheese on a wrap if the roll bin looks sad. Half the counter guys look at me like I asked for sushi. Is it accepted now as a backup, or am I breaking some city rule? Also, who’s still got rolls worth the trip before 9?

Roll is the standard for a reason. If you're on a good roll, nothing beats it. The spot on Church near East 5th gets kaiser rolls in early and they're usually gone by 9. Wrap is a backup but it's a soft backup. If I'm after 10 and the roll looks like it could crack a tooth, I'll do wrap. But don't call it a BEC then, call it a BEC wrap. The extra word makes it sound intentional.

ok glad I found this because I tried this last week after the roll bin looked like rocks. I said 'could I get that on a wrap instead?' and the guy just stared for a second and said 'you mean a tortilla?' I didn't know there was a script. The wrap was fine but it got kind of gummy by the time I walked to the train. Do you ask them to toast the wrap too or just let it be? Also is it weird to ask for hot sauce and ketchup mixed?

Not sacrilege. If the roll is stale, the wrap is the better play. But I’d rather ask them to toast the roll first, and if the toasted roll still has that old bread smell, switch to a wrap. The bodega on Smith by Bergen does decent rolls before 8, after that it’s a coin flip. One thing: don't let them wrap it too tight in foil and steam itself. Ask for it cut and paper.

wait so a BEC isn't supposed to crunch? I just moved here and got one from a cart near the 7 and thought the hard roll was the whole point. I liked it but I also chipped a tooth? Maybe not literally. The wrap sounds like a breakfast burrito to me but maybe I need to try one. Does the egg stay in or does it fall out on the subway?

Unpopular opinion but I think we're too quick to write off a firm roll. A slightly stale hard roll has better structure for the egg and bacon grease than a flimsy wrap. You get a wrap, the first bite sends yolk out the bottom, and now your lap is breakfast. That said, there's a difference between 'firm' and 'stale.' If it cuts the roof of your mouth, it's done. But I'd take a hard roll that's been pressed a little over a soggy tortilla any day.

Fair point on the structure, rent_control_myth. Firm is fine. I'm talking that dry crumble where the roll starts to shatter at the hinge. The press can revive some of them, but not all. I still do roll if I'm near the 9th Ave carts before 8. After 8:30, I'm going wrap and not looking back.

Okay this is the conversation I needed. I moved from the suburbs last year and thought every bodega roll was supposed to be like a hamburger bun. I ordered a BEC and it came on the hard roll and I was confused but now I get it. Are the wraps they use just the flour tortillas from the grocery store? I saw a pack behind the counter once and it looked like mine from Key Food. Is that normal?

novice_newyork, just say 'on a wrap' and if they look blank say 'flour tortilla.' Asking for it toasted helps. Hot sauce and ketchup mixed is not weird, that's basically a poor man's spicy ketchup. suburban_to_bk, yes they're usually just the same flour tortillas from a package. That's fine. If you want it to hold together better, add hashbrown or ask them to go light on the runny egg.

Thanks Kensington_K! I tried the hashbrown addition and it made it way better. The guy still looked at me, but I think that's just his face. I also asked for hot sauce on the side and they gave me a little cup with ketchup mixed in, so maybe I'm becoming a regular. Next question: is it a known thing to ask for a BEC on an English muffin if the rolls are bad, or is that completely out of bounds?

English muffin is respectable if they aren't serving the ones that crumble into dust. Some bodegas keep them near the register and they're fine. But don't put ketchup on an English muffin BEC, that's my line. For wraps, get it pressed in the grill for 30 seconds and it won't be gummy. Also if you're after 11am, just get a lunch special, don't fight the roll.

Update: I tried the wrap today and it was actually great. I asked for it 'on a wrap, easy egg' because I was scared of subway spillage. It held together. Felt a little like a tourist, but no tooth crunch. Then I saw a guy order a BEC on a roll at 11 and the roll looked like a hockey puck. I think I'm converted.

All I'll say is this: the wrap is a legitimate fallback, but the move is knowing your bodega's delivery schedule. If you know the rolls come at 7 and you're there at 10:30, you're making a choice. Firm roll with runny egg still beats a wrap with ketchup on the F train. Unpopular opinion, but we should stop pretending every wrap is a breakfast burrito. Different food.
